Matcha is a pantry item that repays good sourcing. Ours comes from Uji, the district in Kyoto that has grown tea for eight centuries and still grows the best of it. Ceremonial grade for the whisk-and-water ritual. Latte powder for mornings that need a little milk and a little honey. Rooibos matcha for the afternoons that do not need caffeine.
